Spanish Potato Omelette in Air Fryer
We make this at home every week. Using the air fryer makes it easier since I don't have to fry with a lot of oil in a pan—it's healthier, and the flavor is delicious! My special touch...a good chunk of Spanish chorizo, of course! I think you'll love it ;)!

Preheat the air fryer for 5 minutes at 400°F (200°C).

Cut the potatoes and chorizo into small cubes, and finely chop the onion. Set the chorizo aside. Place the potatoes and onion in a bowl, add 2 tablespoons of oil and salt to taste, and mix well.

Place the potato and onion mixture in the air fryer and cook for 22 minutes at 375°F (190°C). When there are 11 minutes left, open the air fryer, stir the potatoes, and add the chorizo. Let it finish cooking.

While the potatoes and other ingredients finish in the air fryer, beat the eggs and heat a skillet over medium heat with a drizzle of oil.

When the potatoes are ready, mix them with the eggs in a bowl, let it sit for a moment, then pour everything into the skillet.

Stir gently so the eggs start to set, then shape the edges with a spatula. When the bottom is set, place a large plate over the skillet and quickly flip the omelette onto the plate. Slide the omelette back into the skillet to cook the other side. Let it cook for a couple of minutes (depending on how runny you like it), then enjoy!
