Well, I didnt take a picture of my ACTUAL dinner, but I did have some leftover steak since I was hungry later and I ate some applesauce with it for some sugar.

Take any Triscuts (best are the flavored; rosemary olive oil, roasted tomato, garden herb, garlic, etc), top with a slice of roma tomato, sprinkle with Italian dressing, grated parmesan cheese, and parsley.

I, very riskingly, tried my hand at making ratatouille just like it was done in the movie. I was TERRIFIED it wouldn't come out good because it was a pretty well advanced recipe. But holyshit was it GOOD. I wouldn't doubt if that tiny serving of it cost upwards of $50 a plate.. it took just over an hour of prep time and another 2 1/2 hrs to bake.

Here is a pic of the pretty pretty peppers involved:

Those peppers were PEELED. Along with the tomatoes.. yes, it called for peeled TOMATOES.. that went with the peppers to make the layer of diced veggies in the bottom of the dish.

Colorfully delicious sliced eggplant, roma tomatoes, yellow squash and zucchini. Sprinkled with olive oil + thyme.

90 mintues later.. all done!Collapse )
Here it is when it came out of the oven. Oh-so soft, tender veggies.. just melted in your mouth.



But wait.. it's not done yet! I just had left to mix up the vinegarette (olive oil, balsamic vinegar, + some of the first layer of diced veggies) that was poured around on the plate.

Yesterday was my friend's birthday, and since I'm a cheap bastard, I offered to cook dinner instead of buying some kind of lame gift.
He said Spanish theme, so I made gazpacho and spanish tortilla.

Cooked up a shepherd's pie for dinner for some friends a couple days ago.
What's manlier than a layer of meat covered in a layer of cheesy mashed potatoes.

The crust dough was from Trader Joe's but everything else was my fault.
