For most of the country, pluviometry decreases...
Either "diminishes" or "decreases" is fine. The problem here is "pluviometry". I doubt very much that it is the study of precipitation that diminishes as one moves away from the Atlantic Ocean; it is far more likely to be actual rainfall that diminishes.
