Hi,

I am watching "The Great British Bake off" and there is a line that I don't understand.
In a scene, the female judge and the male judge are making savoury biscuits.
And he says,
"I like to use unsalted butter because then you can alter the salt."

What does this "alter the salt"mean?
Would someone explain please?

It should mean "add as much or as little salt as you want to the butter." Perhaps he's referring to doing something unusual with the salt, but that seems unlikely.
The alternative is "salted btter" but you can't take the salt out of it if you want less salt in your biscuits. With unsalted butter you have control over the amount of salt in the recipe - you can adjust it/change it /alter it.
