Is "I met him at the dentist" acceptable?
A textbook says this should be "I met him at the dentist's (office)".

Your textbook is correct.

"I met him at the dentist" is not acceptable for standard English.
No, not really. Anymore than we can say, "I'm at the doctor." Dentist and doctor are people, not places.

I'm at the dentist's.
I'm at the doctor's.
