Could you please tell what is "cardio" in the following context:

"How would you know a body-conscious babe is in your midst? She:
- Brings celery and carrots in a little plastic bag for lunch instead of brownies.
- Orders salad at the all-you-eat restaurant
- Uses terms like Body Mass Index (BMI) and cardio..."

Which is the full form of "cardio" in this case?

You can't know the full form - "cardio" before another element refers to the heart. "Cardiovascular system" for example.
In this context, the most likely expansion is cardiovascular exercise.
Those of us familiar with hi-tech gym equipment will also be familiar with some of the terms/abbreviations used on such equipment.
Cardio is one of them.
On the cardio programme, the torture device (fitness equipment) adjusts the load on the victim to maintain a target heart rate.
I understand cardio as an abbreviation for cardiovascular exercise - exercise intended to improve your lungs and blood circulation, rather than to develop visible muscles.
"Cardiovascular exercises" is a common phrase it was coined in the 1960's as part of a series of books on fitness training. I believe it is an incorrect term and should be "cardiovascular-pulmonary...", but I think it is too late to correct the rest of the world (and possibly, this is too much of a mouthful to say).
