The challenge bacteria are those which cause the problem, and thus are the target of the sanitizing process. (The word "challenge" in a medical or clinical context often means "attack": "these materials challenge the nervous system", etc.)

Hola. Según el contexto, "challenge" podría ser "desafío", inoculación", etc. En este caso, yo simplemente diría "bacterias de ensayo" o "bacterias para la prueba" o algo similar.
