Good question. There could easily have been "the" (or even "a" if there were many other co-owners). But often with job titles and professional positions these are omitted. E.g:

He was manager of a widget company.
She was voice-coach to a rap musician.

Note that this only works if the sentence continues with explanatory information. You wouldn't say "From 2001 to 2008 I was teacher" 👁 Cross :cross:

Not really. It doesn't sound right because there is often more than one of them in any school.

I was head teacher at that school sounds more likely.

It sounds as though the school only had one English teacher. If that's what you mean - it works. If there was more than one, then, no !
I still think you would need an article for the English teacher job, even if there WAS only one in that school.

I wouldn't object to the definite article, but wouldn't require it, if there were only one English teacher there. If there were only one, then the indefinite article would be less desirable because of potential ambiguity - it could mean "I was an English teacher (at that school)" or "I was (an English teacher at that school)."

It is interesting when we start to make theoretical contexts to test examples.

I am sticking with my original reservation that, due to the general way of the world and staffing in schools, it would seem odd to say I was English teacher at that school.
Indeed! When I was at school I recall with certainty we had only one physics teacher, one chemistry teacher, one French teacher and one biology teacher - it was a small school and the concept of one teacher for each subject sounded quite sensible - a "set" of teachers. I don't recall exactly the situation with English teachers (there may have been a language one and a literature one). So, with that as background for our theoretical contexts, a sentence which has no article in front of physics teacher doesn't sound strange to my ears.
