I want to know if it's a natural and acceptable construction to couple "even" with "come" in the below sentence I made.

"There is a good chance the parts won't be available even come January"

By "even come January", I tried to mean "even when January comes"

I'm not sure if it sounds OK to the native's ears because I don't think I've ever seen "even + come" construction.

Yes, it means "by the time January comes"; "even come " is alright in this case.
I'm sorry, it sounds odd to me.

I'm not sure you want "come January", leaving aside the "even". "Come January" doesn't work particularly well in what appears to be a business context.
It sounds fine to me, like something that a person making repairs would say to someone who owns the object that's being repaired. "I'm sorry, sir, we have no parts for your Lamborghini at the moment, and there is a good chance the parts won't be available even come January."
I would do it as "...the parts won't even be available come January" but it sounds perfectly okay to me otherwise. 👁 Smile :)
