Can I replace the word "edible" with "eatable" in this sentence without much change in the meaning?. I think I can because word edible means that part which is eatable.

Until I looked it up, I would have agreed with you but... live and learn! It's defined as a synonym of "edible". LG, I'm going to recommend that you use "edible" and not "eatable" because, in all honesty, I can't say I've ever heard the word used before (dictionary or no dictionary!).
It sounds weird. I'd rather say "edible".
