Yes it's fine. Exceptionally is an adverb, and in your answer the verb 'am' to which it refers (along with the noun 'I') would be in the first part of the sentence (I am exceptionally fine) which you have omitted as you are speaking casually (which is fine).

So, all fine, except your use of 'How r u' which will get you rapped on the knuckles with a digital ruler (or a fine....) by a moderator. Read the forum FAQ and you will see that writing in standard English is expected from users.
