I don't understand the meaning of the underlined part.
What does that mean?
It means that there is a trend in which people may also experiment with the way in which they process coffee. Perhaps they roast the beans in a way that is different from the ordinary way of roasting coffee beans. Perhaps they do something else to the beans.
