I think so. It's another way to say that the job is very difficult. "Fairly impossible" isn't logical, but its meaning is easy to understand if you don't insist on rigorous logic in language. I don't, so "fairly impossible" doesn't trouble me.

I think you want to say "almost impossible".

If it is impossible, no-one can do it.
If anyone can do it, it is not impossible.
There is nothing in between.
There is no "partially impossible".
This use of "fairly" means partially, so no.
