I'm making a portfolio of journals I have written in french. On one side there are the rough drafts and on the other are the final drafts or the finished pieces. I'm not sure how to title each side. My best guess is:

Les bruillons (rough drafts) et les bons a composers (final draft) or les tierces epreuves.

As far as I understand, bons à composer are in printing contexts, etc., when an order or job is finally determined before it is printed. Does that fit your context?
mmmm not exactly. Its more of a finished essay thats already printed out in its final version.

I'm putting together all of the compositions that i've written for one of my french classes, and i'm wondering what the best word is for 'final draft'. In la table des matières i've been using premier jet et deuxième jet for the first and second drafts, would le dernier jet be the best term to use?
Peut-être que le bon à composer, ou le jet final?
Here's an example of what it will look like this on the table of contents:

Composition 1

le Premier jet
le deuxième jet
le ...?

Also, do you think it's necessary that i put "le" in front of each one?

How about "mouture finale" or "dernière mouture"?
You don't need to add the article here as it is a written list (like chapters in a book = "chapitre 1" etc.

No, it's superfluous.
"Ready for press", if it is what you mean with "jet final", is translated into French by "Bon à tirer".
