How in the hell could a man enjoy being awakened at 8:30 a.m. by an alarm clock, leap out of bed, dress, force-feed, shit, piss, brush teeth and hair, and fight traffic to get to a place where essentially you made lots of money for somebody else and were asked to be grateful for the opportunity to do so?
Charles Bukowski, Factotum

What does the author mean by "force-feed" in this context?
He means eat breakfast with very little time available. So instead of enjoying your meal in a leisurely way, you have to eat very quickly in order not to be late to work.
Thanks Kentix.
Dictionaries are not familiar with this sense. Is it coined by the author?
It fits the dictionary definitions @ WRF. He forces himself to ingest his breakfast quickly. The creativity is in using it reflexively ๐Ÿ‘ Smile :)

หˆforce-หˆfeed, v. [~ + object (+ object)], -fed, -feedโ€ขing.
  1. to force to ingest food.
  2. to force to learn:force-fed military discipline.

Collins Concise English Dictionary ยฉ HarperCollins Publishers::
force-feedvb ( -feeds, -feeding, -fed)(transitive)
  1. to force (a person or animal) to eat or swallow food
I've never heard "force feed" used intransitively, as here, but I have no problem with it. " Force-feed " is usually used of prisoners who are on hunger strike - some of the first the Suffragettes were force-fed in British prisons.
Yes, he's being creative. And that's fine as long as your creativity makes sense to your reader and the meaning is understood. Sometimes it makes your writing memorable.

Stephen King is an author who is sometimes so "creative" that his meaning is lost to the reader. That's more annoying than enjoyable for most people.
