Please give us a complete sentence. If "bread" is followed by a noun, "bread" is adjectival. If it is not followed by a noun, it is itself a noun. This will have an effect on the meaning.
The context is like this:

This cheese goes well with hearty bread.
This is meaning 4 of hearty.

A hearty bread would be one that is filling and full of nutritious ingredients. A soft white bread is not a hearty bread. A heavy brown bread is.
By 'hearty' I would imagine fresh, crusty bread, probably home-baked.
