Hello,
I would like to know if it is possible to use Hi gorge! as a greeting in an informal email to a friend. Would you understand it as short for gorgeous? Is it common at all?

It is certainly possible, but I am not sure that it is a good idea. I associate the word gorge with gluttony: He gorged on mashed potatoes and gravy. People also use it in this expression of disgust: That made my gorge rise.

Somebody might understand it that way. I think that you will do better to stick with Hi, gorgeous!
Is it common at all?
Probably not.
No, I've never seen gorge used that way, in fiction or in real life, even by people who might call each other gorgeous.
My first thought was the "canyon" meaning, as in: There's a high gorge in the mountains that fills up with water when it rains.
