With уикенд being a loan word from English, how does one express what they typically do "on the weekend"? "в уикенд"? Is it undeclinable?

Thanks!
Moreover, I referred to my Lopatin's Russian Language Dictionary (and Dietmar Rosenthal's guidebook as well). The only correct spelling is "уик-енд" (with hyphen). Ough... You can also check it here (Грамота.Ру).
The word is declinable.
I'd better not use this word in Russian, it can be perfectly well substituted by the word "выходные/выходной". Nowadays foreign words are being too often abused in speech, and I wouldn't use such a word when there is a perfect equivalent to it, not that I'm a purist or something!

Perfectly legitimate perspective. So with выходные and выходной, how does one express "on the weekend"?

Most often it's "на выходных". For example:

Чем ты занимался на прошлых выходных? На следующих выходных мы пойдём в кино.
"На выходных" sounds better.
Правильно, как написал Panda Nocta, - "...в выходные дни". "На выходных днях" - просторечиво-разговорный вариант.
На выходные rather means something occupying the whole weekend:
На выходные я уезжаю копать картошку.
В выходные я постираю белье, схожу в кино, высплюсь и сделаю еще много полезных вещей.
уикенд
You also may be cursed by purists if you'll use it, be careful with that %)
Heritage of 90th, there was too many western-oriented people(who added such words to the languge), nowdays we have a bunch of eastern-oriented and straight patriots who struggle hard for the language purity. 👁 Smile :)
Вот что по этому поводу написано на Грамота.Ру:
Как правильно : на выходные или на выходных? Например: что ты делаешь на выходные?
Ответ справочной службы русского языка:
Правильно употребление предлога в: _в выходные_, словоформа _на выходных_ - разговорно-просторечная.
