Shout/Shouting

Would someone tell me can I use shout instead of shouting in the sentence below as 'shout' also is a noun. If I can't, why the sentence used 'shouting'? Thank you.

Fortunately, the 'shouting' woke up my wife who opened the window just as the policeman had started to climb towards me.
A shout is one noise. Shouting is more than one.

Give a shout if you need more help.

I got your point. So can I use 'give shouting if you need more help'?
"Give (usually we insert "me or "us" here) a shout" is a fixed idiom which means "shout" (verb) in the sense of "call us" (it does not literally mean that this should be done loudly -- here it just means "ask again").
If you were to give someone "a shouting", this would mean that you are vociferously remonstrating with someone. How many more times do I have to tell you to tidy your room?
