Just a curiosity,

how natural does this sentence sounds?

'Science suceed in sparing most people from infirmities'

I read that in an old book, and I wonder to what extent it is common to use those words.

Would my attempt be as valid?:

'Science suceed in affording most people suffering diseases'

Any suggestion?

The first is slightly odd - 'should be science succeeds in sparing most people from infirmities'. But apart from that it's not unnatural. Your attempt isn't correct because afford isn't right for this context.

but which one is the verb, to spare?

Why don't to make the gerund as 'spareing'? is there any rule about that?

If the subject is 'Science', then the verb is 'succeeds' (or whatever conjugation is appropriate)

Un ejemplo:

"La ciencia triunfa manteniendo/en mantener a la mayoría [de la gente] a resguardo de las enfermedades."
