When we say a sticker, do we always mean a small label? Can we call a big adhesive poster a sticker?

That would probably be confusing, Felikat. How big is the adhesive poster that you are thinking about? I would be reluctant to use sticker in a reference to something that was only as big as a sheet of notebook paper. Most stickers are smaller than that.
"Sticker" can also mean a price tag, especially the one attached to a new car in the U.S. That sticker is approximately the size of a standard sheet of paper. Can you tell us more about the sticker you have in mind?
So if it is a height chart or a concert poster, can I say adhesive height chart or adhesive concert poster?
Yes, you can. If you need to mention something about the adhesive quality of a poster, adhesive concert poster makes sense.
