I know it's been FOREVER since I've posted over here, so I bring an exciting & easy dessert that will impress your friends and family. You can even fudge on how you slaved over baking the cake from scratch if you want. ;)

Tres Leches Cake, if you've never had it, is a traditional Mexican Dessert. It is delicious and super sweet, so you don't need a lot.

Tres Leches: Three Milk Cake

Ingredients
1 yellow cake mix baked as directed in 13 by 9-inch pan

For topping mixture:
1 can evaporated milk
1 can sweetened condensed milk
1 pint heavy whipping cream or half & half
1 teaspoon vanilla extract
1/2 cup rum (optional)

To finish:
Whipped cream, to cover cake (I used 2 cups whipping cream, 1 tsp vanilla extract, & 6 Tbsp powdered sugar)
5 ounces coconut toasted

Directions
Poke holes in the cake with a fork all over. Mix topping together until well blended. Pour topping mixture over cake. Let mixture absorb completely in refrigerator.

Cover with whipped cream sprinkle coconut over top of cake.

Basalmic Glazed Roasted Vegetables and Beluga Lentils Salad

This is a fabulous recipe from my friend at school--she's not a vegetarian, but man, with this recipe, I'm sure she could be one! She made enough to share with me one lunchtime, and I adored it.

Ingredients:

Basalmic vinegar glaze

Beluga lentils (available at Trader Joes)

1 white onion, chopped
1 red onion, chopped
2 stalks of celery, chopped
1 roasted red pepper
1 can mushrooms

Toasted sesame seeds/ White and black pepper, tumeric, seasalt and herbamire, 1 head of garlic, chopped to taste.

1) Roast all veggies until tender, toss in spices (20-30 minutes)
2) Microwave lentils--90 seconds
3) Combine all ingredients and toss, saute in pan around 5-10 minutes
4 Serve with glaze drizzled on top.

Diet Mountain Dew Apple Dumplings

  shared her regular "Country Apple Dumplings" recipe with me, but there was just way too much sugar. I've the cut the sugar and replaced it with Splenda & Diet Dew, and it's AMAZING!

Spaghetti Pie

Ingredients:

1lb of Spaghetti (cooked)

1 Egg (beaten)

1 Jar of Spaghetti Sauce

1lb of Ground Beef or Ground Italian Sausage (browned & drained)

15 oz of Ricotta Cheese

1 Bag of Shredded Mozzarella

1 Bag of Shredded Parmesan

Garlic Powder (or granulated garlic)

Butter

Italian Seasoning Blend

Instructions:

  1. Pre-Heat oven to 375˚
  2. Mix Pasta, Egg, Butter, Italian Seasoning & half the bag of Parmesan Cheese together.
  3. Spray pan with cooking spray and line it with the Pasta mixture like a pie crust.
  4. Warm the Ricotta Cheese for 1 minute in the microwave on High.
  5. Combine the Ricotta Cheese, half the bag of Mozzarella & Garlic.
  6. Spread the Ricotta Cheese mixture over the top of the Pasta Crust.
  7. Combine the cooked meat & spaghetti sauce in a skillet to warm.
  8. Pour the sauce onto the top of the pan.
  9. Place in the oven for 25 minutes
  10. Remove pan and sprinkle remaining cheese on top and return pan to overn until the cheese is melted (but not brown).
  11. Serve with bread and a salad.

Serves 4

Creamy Chicken and Pasta Bake

This recipe's from Kraft Foods, so don't mind me when I say I didn't expect much. But it was delicious! Doesn't take long to cook, either. Good for Mac and Cheese lovers.

1 1/2 cups pasta, uncooked
3 cups broccoli
1 lb boneless chicken breasts, sliced into bite-size pieces
1/2 cup chicken broth (fat free or reduced sodium)
2 oz. cream cheese
1 cup shredded mozzarella cheese
parmesan cheese for topping

1. Heat oven to 375 degrees.
2. Cook pasta on directed, adding broccoli for the last 3 minutes of cooking.
3. While pasta is cooking, put chicken into a nonstick skillet and cook until no longer pink.
4. Stir in broth, simmer 3 minutes. Add cream cheese and stir until melted. Do same with mozzarella.
5. Drain pasta and broccoli and mix with chicken mixture. Spoon into square baking dish and cover.
6. Bake 15 minutes or until heated through. Sprinkle with parmesan cheese to your liking. Then bake for additional 5 minutes until cheese is melted.

Onion Biscuit Casserole

Or Onion Beef Bake as we always called it. An absolute favorite of my mom's, mine and my sisters.

1lb lean ground beef
1 onion chopped
1tbsp cooking oil
Salt and pepper to taste
1 can (16 oz) cut green beans, drained
1 can (16 oz) whole kernal corn, drained
1can (10 1/2 oz) condensed tomato soup

(onion biscuit reciepe below)

Saute onion in cooking oil in med size skillet until soft but not browned. Add meat and seasoning and brown lightly. Drain off fat, add veg and soup to skillet. Mix well and heat to boiling. pour into oiled 1 1/2 qt casserole dish. Top with onion biscuits.

Onion Biscuits
3/4 chopped onion
1tsp cooking oil
1 1/4 cups biscuit mix
1tsp celery seed
1 egg beaten
6tbsp milk

preheat oven to 450* Saute onion in cooking oil until soft but not brown. Drain. Mix all ingredients together at once. Turn onto floured surface and knead a ew minutes. Roll 1/2 inch thick and cut with a doughnut cutter. Place biscuits around edge of casserole dish. Arrange biscuits in middle of casserole dish. Be certain meat mixture is hot before plaing the biscuits on top. Bake 10-15 minutes or until biscuits are golden brown.

You can make the casserole without the onions but it doesn't taste quite the same. Also make more biscuits than you can fill the dish with. They're so awesome you'll want some on the side!

Peanut Butter Pie

Peanut Butter Pie

8 oz. cream cheese
2 8 oz containers of Cool Whip, thawed
1 cup of natural peanut butter
1 cup confectioners sugar
1/3 cup milk
1 tablespoon of vanilla

Blend cream cheese, peanut butter and one container of Cool Whip. Add sugar, milk and vanilla; blend thoroughly. It will be thick, but if it's too difficult to mix, add more milk, 2 tablespoons at a time.

Spoon mixture into baked 9 in. deep dish pie shell.

Freeze for 45 minutes.

Top with second container of Cool Whip, sprinkle with cookie crumbs or shaved chocolate. Store in refrigerator until ready to serve.

I used a pastry crust because that is what my husband prefers. You can use a graham cracker or chocolate crust, but don't use the store bought ones, they are regular size and this is a deep dish pie.

Bombay Chickpeas

I've had the worst craving for chickpea and spinach curry all week (despite never having eaten it, wtf?) so a quick reccy in the kitchen pulled up both chickpeas and spinach, but also a packet of Bombay Potato mix that's been haunting the spice cupboard for just about as long as I can remember.

So I diced up and part boiled a few potatoes, chunked some onion and cooked it with the mix and added two tins of tomatoes, the chickpeas and spinach and let it simmer for about ten minutes. I'd feel like a cheat, but it's pretty good so I'm letting myself off - plus I didn't have to buy any new groceries, which is nice. My lunch for the week sorted and it cost nothing (which is good because the work canteen does not, is delicious and, I believe, is part of a covert mission to make me fat as a house.)
