Cargill pushes soy farming that's obliterating the Amazon


Soy production has overtaken logging and cattle ranching as the main source of Amazon rainforest destruction. In the past three years, nearly 27,000 square miles of the Amazon have been destroyed, nearly three-quarters of it illegally. Much of the acreage was sold to soy producers, financed in large part by agribusiness giant Cargill, the largest privately owned company in the world. Brazil has become the world's leading exporter of soy; last year, the country produced more than 50 million tons of the protein-rich bean from an area approximately the size of the United Kingdom. In 2004, Brazil was in the top four global greenhouse-gas producers -- because of the smoke from burning trees. Brazilian activist Cayetano Scannavino Filao says that in the three years since Cargill opened a port in the city of Santarem, deforestation in the surrounding area has increased 511 percent. "We used to fight the loggers, but the loggers, they eat the Amazon in small bites," he says. "The soy is eating the Amazon in big bites."

It's distressing to me to think that eating soy can be that detrimental to the planet when the planet is one of the main reasons I want to be vegetarian/vegan. (No, haven't switched yet; I'm doing it gradually this time so it'll actually stick!) I'm currently researching vegetarianism that uses much less soy and more beans and plant-based proteins.

...And, I am always looking for new food ideas, so here is my list of what I ate today to get things started.

Notes: I am not vegan. Sunday is my least healthy and laziest eating day of the week.

Brunch: Spinach, Cheddar and Egg sandwich on an Everything Bagel with some fries

Late Dinner: Fontina Cheese, Fuji Apple, and tangy honey mustard on ciabatta bread

I promise the rest of the week will be better. Here are some of the items in my fridge that will become tasty meals this week: gold beets, kohlrabi, garlic scrapes, lots of tasty greens and kale.

I’m going to make a rice-eater out of Vin if it kills me. He doesn’t admit it, but I think he thinks that eating a rice dish isn’t manly or some bullshit... or maybe it’s just eating any meal without meat. So last night I wanted to test the old Vin.
I cooked up this nutty lemon rice dish that was the first thing that Trobee of the Naughty Curry blog ever had me taste-test last year. It had been my first time eating cashews in food-- . I made it last night exactly according to the recipe on the NC blog, and it was as good as Trobee’s. But I’ll be damned if I’ll tell her that.

PS. Vin ate it. All of it.

3 cups cooked warm rice (made from 1 cup raw rice)

2-3 tsp oil

3 Tb cashews bits or halves

1 cup of artichoke hearts (canned), chopped with tough pieces discarded

1/4 tsp salt

2 Tb lemon juice

1 tsp turmeric


Masala:

1/2 tsp black mustard seeds (Trobee uses 1 1/2 tsp)

1 Tb urad dal or yellow split peas

1/8 tsp asafetida (Trobee uses 1/2 tsp)


Get out a platter or baking sheet and lay out the rice, breaking up the clumps.

Get out your medium skillet and heat the oil. Roast the cashews until they have deepened a few shades, then remove them with a slotted spoon and set them atop the rice.

Back to the skillet. In the nut-infused oil, add the masala and cover.
As soon as the mustard seeds have quit popping, add the artichoke pieces and stir-fry until they are heated through.

Pour the pan's contents over the rice. Add the salt, lemon juice and turmeric, and stir everything together with a fork.

Veggie Sandwich on Sundried Tomato Bread w/ Red Potato Home Fries

  • Sun Dried Tomato Bread (available at Sun Harvest)
  • Light cream cheese spread (room temp softened to keep from breaking the bread)
  • Sliced roma tomato rounds sauteed (on one side only) in extra virgin olive oil. Seasoned on the top side with italian herb seasoning and black pepper garlic mix.
  • Mixed baby greens spring mix
  • Alfalfa sprouts
  • Yellow onions lightly grilled in the remenants of the olive oil from the tomato sautee

Oh and the bread was also toasted on the further used up remaining extra virgin olive oil greased skillet

The fries:

  • Sliced small red potatoes fried til extra crispy in unrefined coconut oil (not unrefined because I'm an organic nut, but because unrefined retains a slight hint of the aroma and flavor of coconut. It's mostly meant for use in baking, for its unique flavor, or in polynesian dishes... but something about frying in a light aroma of coconut on red potatoes sounded like a good idea). Onion powder to taste during frying. A dash of seasoning salt at serving time.

i made the yummiest indian-inspired meal last night!

crumbled extra firm tofu, broccoli, carrots, mushrooms, roasted cashews and fresh crushed garlic sauteed in vegetable oil and seasoned with curry, ginger, cinnamon and a little salt.

100% vegan and deeeeelicious!

First of all I would like to say hello you all of you. I live in Michgan, and I live like 4 miles to a ferry that take you to Canada. I hope i like this Commutiy.
Secondly I would like to become a Vegetarian or Vegan,this is a problem because I love food like quesadillas, chicken, chicken stuffed sald shrimp, lopster, crab, meatloft, and foods like that. I love animals and it is starting to make me sick think of eating me, it is starting to seem life addiction. In the past I have tried to become a Vegetarian be failed, I have also tried to drink soymilk but that was just plain NASTY!!! I was hoping to get ideas on how some of you became Vegetarians. This is so hard to do since my mom fixes meat every day for dinner. And it would be great I you can give me links to Vegetarian repices. Thanks so much!!

ok, i'm kinda new here...been reading for awhile, but never really post.

i have a question.

I've been veg for 5 years. my daughter is too. my bf, however, is not. but i want to make him dinner...something he will EAT! lol.

any ideas? i want it to be really good because your first veg meal marks all the OTHER veg meals to come (or not come...depending on that first one)

kinda weird though...he's so in denial about animal cruelty (my reason for being veg)...he knows that truth but doesn't want to hear it. i don't push it, but COME ON! once you know something, isn't it hard to pretend it doesn't exist?

anyway, i ramble...

anyone got a good meal to prepare?

All kinds of discussion are welcome, with the exception of debate about vegetarianism vs. meat-eating -- the people on this list are stipulating that the list is pro-veg, but omnivores are welcome if they don't try to convince listmembers to eat meat.
