Le terme hébreu shechita, également translittéré shehitah, shechitah, shehita, signifie l'abattage des mammifères et des oiseaux à la nourriture. En hébreu, le mot est générique et n'implique aucune pratique religieuse ou culturelle, mais en anglais, le terme a été utilisé en particulier pour «l'abattage kosher», c'est-à-dire l'abattage d'animaux pour la nourriture selon les lois alimentaires juives. L'animal doit être tué «avec respect et compassion» par un juif religieux dûment autorisé et formé, souvent appelé en anglais, mais en hébreu, ce mot se réfère à un boucher indépendamment de toute religion ou culture particulière. L'acte s'effectue en séparant la trachée, l'œsophage, les artères carotides, les veines jugulaires et le nerf vague dans une action rapide en utilisant une lame extrêmement pointue uniquement par un shochet qualifié. Selon les sources religieuses juives, cela entraîne une baisse rapide de la tension artérielle dans le cerveau et une perte de conscience rendant l'animal insensible à la douleur et à l'exsanguination dans une action rapide et précise. The Hebrew term shechita, also transliterated shehitah, shechitah, shehita, means the slaughtering of mammals and birds for food. In Hebrew the word is generic and does not imply any religious or cultural practice but in English the term has come to be used particularly for "kosher slaughter", that is the slaughter of animals for food according to Jewish dietary laws . The animal must be killed "with respect and compassion" by a religious Jew who is duly licensed and trained, often called in English a shochet although in Hebrew this word refers to a butcher regardless of any particular religion or culture. The act is performed by severing the trachea, esophagus, carotid arteries, jugular veins and vagus nerve in a swift action using an extremely sharp blade only by a qualified shochet. According to Jewish religious sources, this results in a rapid drop in blood pressure in the brain and loss of consciousness rendering the animal insensible to pain and to exsanguinate in a prompt and precise action.
