The remaining two skin packs that aren't currently documented on the wiki (Team Up! and Everyday Heroes) are seemingly third-party Marketplace skin packs that were simply included in Minecraft Education and thus don't meet the wiki's notability guidelines.
All other skin packs (Biome Settlers, Redstone Specialists, etc.) are available for other Minecraft editions as well, which is why they are listed in the cross-platform section of the navbox.
