Iya-Themed Japanese Cuisine
Our hotel chefs draw out the inherent flavors of natural local ingredients such as edible wild plants, buckwheat noodles, and grains. Fresh, local ingredients and creative ideas connect the past with the present.
Our chefs also seek out the finest ingredients from many other areas to treat our guests to outstanding cuisine and first-rate hospitality.
Featuring Fresh, Local Ingredients
Dine on delicious cuisine made with wild plants only found in this area and dishes inspired by traditional local products, such as buckwheat and Iya tofu.
Enjoy the harvest of each season in culinary delights that reflect the richness of Iya's natural surroundings.
We source our ingredients as much as possible from Tokushima Prefecture where Iya is located.
Sudachi ayu are raised in the Yoshino and Akui rivers where there is plenty of clear, cool underflow. Ayu is prized for its delicate, slightly sweet flavor, from which the name "sweetfish" is derived.
There are several famous brands of beef produced in Tokushima, including Awa beef. Enjoy it grilled teppanyaki style to bring out the full flavor.
Japanese sake and wine complement our Kaiseki courses to create the perfect match of good food and fine drink. There are three sake breweries in the mountains of Miyoshi.
