Red green colorblindness had no effect on rubies being replaced with emeralds. Red green color blindness causes difficulty in the ability to distinguish between the colors red and green, which would make redstone and emeralds hard to tell part, rubies and redstone, were hard to tell part because they're the same color, so the logical choice was to make the new ore the opposite color of redstone, so that the majority of the people can easily tell the difference.
We actually didn't go with rubies and changed to emeralds at last minute for the villager trading because I'm colour blind and couldn't easily spot the difference between the ruby ore and redstone ore until I was up close. Those last images are just torture
