After testing breaking dry sponges by hand, d. pickaxes(E:4), d. axes (no efficiency mod), d. shovels (E:5), iron shears (no mod), and a d. sword (sharpness 4 if it matters), I can say for sure that the diamond sword breaks the block faster than all other methods by maybe 25-30%. I haven't captured footage and examined it frame-by-frame to see the exact speed, but sword is definitely faster if you need to harvest sponges faster, at least if they're dry. You could test it more easily in Creative mode in a flat world, giving yourself an array of unenchanted implements and a big row of wet and dry sponges, then switch to Peaceful survival and test. ~ Amatulic (talk) 18:47, 24 February 2020 (UTC)

There are a finite number of sponges and Elder Guardians in the world, and no way to create more. You can't craft them, you can't trade for them. That's how. ~ Amatulic (talk) 14:39, 4 October 2020 (UTC)
