After testing breaking dry sponges by hand, d. pickaxes(E:4), d. axes (no efficiency mod), d. shovels (E:5), iron shears (no mod), and a d. sword (sharpness 4 if it matters), I can say for sure that the diamond sword breaks the block faster than all other methods by maybe 25-30%. I haven't captured footage and examined it frame-by-frame to see the exact speed, but sword is definitely faster if you need to harvest sponges faster, at least if they're dry. sponges are not smelted in a furnace to dry, they are cooked in a furnace to dry
