As with most security options, it's a consideration to make of performance versus added security protections and what is the priority for your workloads or organization.
The confidntial VM in Azure's cloud was slower at code compilation workloads than without the added security benefits. But most CI/CD build farms and the like shouldn't be needing SEV-SNP protections, at least not in the open-source world.
